Carrot-Ginger Soup with Quinoa

This soup is soooo good. The flavours are so fresh – this tastes like a bowl of summer, but it’s still warm and comforting. It’s easy to make, too, and good for you. You get a seriously big serving of veggies in every bowl, plus ginger, which is good for digestion.

Can we also just take a moment to be thankful for immersion blenders? They’re the bomb, when it comes to easy soup-making. I covet the vitamix that can make soup, but until then the immersion blender is my bff.

So, let’s get right down to it, because this isn’t a soup that needs a lot of explanation. This soup speaks for itself.

Ingredients:

  • 1 onion
  • 2 tbsp chopped ginger (maybe a touch more)
  • 6 cups veggie broth
  • 9 BIG carrots, chopped up
  • 2 cups quinoa, cooked (1 uncooked)
  • 1 tbsp olive oil
  • 1 clove garlic

Directions:

  • Sauté the onion in olive oil and garlic until tender.
  • Add carrots and sauté for a few minutes.
  • Add broth and simmer until carrots are just soft. With the immersion blender (or a regular blender if you don’t have an immersion one).
  • Add in cooked quinoa. Taste. Add more ginger if necessary.
  • The secret lies in having good broth and fresh carrots and ginger. Since the broth is salted the soup shouldn’t need it, but if yours isn’t you could lightly salt this.

Ingredients

  6. Now enjoy - It’s light, refreshing, and super good for you.
