So, I have an easy-peasy recipe today because WE HAVE PUPPIES! Yup, Craig and I are the proud new “parents” of two Border Collie/Chihuahua crosses. They probably couldn’t be cuter if they tried and are endlessly energetic, so as a result I am neither of those things right now. Hence, the easy-peasy recipe.
I’ll post pics as soon as they sit still long enough for me to get a non-blurry one. For reals, though, it’s freakish how cute they are.
So, breakfast in a hurry. This recipe only requires a little bit of prep on Sunday (or whenever), and then you can have a two-minute breakfast for the whole week.
So, all you do on Sunday is make a whole bunch of red quinoa (I cooked two cups of grains, so I got about four cups cooked, maybe a little more. Then, chop up about a cup of raw almonds, and lightly toast them in a pan for a couple of minutes. Pour two tablespoons of maple syrup over and cook, stirring until all the almonds are coated and the maple syrup has thickened, about another minute or so.
Then, let both of them cool and store them over night. In the morning, heat up as much quinoa as you’d like (I did about a cup, maybe a little more). Chop the berry of your choosing over, sprinkle with the maple almonds, and pour almond milk over the whole thing. It sounds so simple, but it’s really delicious, I promise.
And…now I have to go pick up more poop. Housetraining, you cannot come too soon.
